Is it possible to use Canis Major? I mean Minor is in use, but I they are two different constellations. I'd like to have a Zodiart character evolve into Capricorn later on in the story and Canis Major sounded good.

I changed the canon. They don't evolve into Horoscopes; the Horoscopes are completely separate entities.

All I can say is that Canis Major is receiving use in an upcoming character arc, so one thread, but Zodiarts are basically like Dopants, there are multiple.

But I'm not the one completely in charge of this, so Black has to answer that one.

I'm like 90% sure you're fine with Major, and as for who's taken, a lot of them are since the designs are actually quite nice for the Zodiarts. I lack a list, however, but could procure one with some time.
